How to Make Water Kefir at Home in 10 Minutes: A Step-by-Step Guide
Making water kefir requires only 10 minutes of active work, and in 48β72 hours, your refreshing, live-culture probiotic drink is ready. In this guide, we'll show you step-by-step how to make it at home using Japanese Crystal Mushroom.
What Will You Need?
Ingredients (for approx. 3 liters of drink):
- 200g of fresh Japanese Crystal Mushroom (water kefir grains)
- 3 liters of filtered water (chlorine-free!)
- 300g of white sugar
- 1 handful of organic raisins (unsulphured)
- 1 organic lemon
Equipment:
- 5-liter glass jar
- Plastic sieve (NOT metal!)
- Plastic or wooden mixing spoon
- A clean kitchen towel or a small plate to cover it
- Glass bottles for the finished drink
β οΈ Never use metal utensils with your Japanese Crystal Mushroom β the metal can damage the live culture.
Step-by-Step Guide
Step 1: Rinse the Grains (1 minute)
Pour the newly arrived Japanese Crystal Mushroom into a plastic sieve and gently rinse them with filtered water. Never use tap water β the chlorine can kill the beneficial bacteria.
Step 2: Prepare the Sugar Water (3 minutes)
In a 5-liter jar, dissolve 300g of sugar in 3 liters of filtered water. Mix well until the sugar has completely dissolved. (Don't worry about the sugar β the grains will consume it during fermentation!)
Step 3: Add the Grains and Other Ingredients (2 minutes)
Place the rinsed crystal mushroom grains into the jar, add a handful of organic raisins, and one sliced organic lemon (with the peel). Cover it with a clean kitchen towel or a small plate. Do not seal it tightly, as the grains produce carbon dioxide that needs to escape.
Step 4: Let it Ferment (48β72 hours)
Place the jar in a spot at room temperature, away from direct sunlight. Stir it once a day with a wooden or plastic spoon. After 48β72 hours, your drink is ready β the longer it sits, the tarter and fizzier it will become.
Step 5: Strain and Bottle (4 minutes)
Strain the drink using a plastic sieve, squeeze the juice from the lemon slices into it, and pour it into glass bottles. β οΈ Do NOT seal the caps tightly β the ongoing fermentation can create pressure!
Put it in the fridge, wait for it to cool, and enjoy! π₯
What to Do with the Grains for the Next Batch?
You can reuse the strained grains β you can repeat the same process for weeks. If you want to give them a rest, put them in sugar water and store them in the fridge (for a maximum of 1β2 weeks).
Common Mistakes to Avoid
β Using raisins preserved with sulfur dioxide β the sulfur dioxide will destroy the culture
β Metal utensils β use only plastic or wooden sieves, spoons, and lids
β Sealing bottles too tightly β risk of explosion
β Environment is too warm β above 28Β°C the grains can get overactive
β Cold pantry β fermentation stops below 18Β°C
How Much Water Kefir Should You Drink Daily?
For beginners, a daily amount of 100β200 ml is recommended, gradually increasing to 300β500 ml. Consuming too much at once may cause temporary digestive reactions as your gut flora adapts.
